2 Lemons
2 Egg Yolks
¼ Cup of Parmesan Cheese
½ Cup Extra Virgin Olive Oil
1 Garlic Clove
4 Anchovies
Salt and Pepper to taste
Add anchovies, egg yolks, juice of the lemons and garlic to
a blender. Pulse this together.
Add in Extra Virgin Olive Oil and continue to emulsify in
blender.
Stir in the Parmesan Cheese.
Finished Product!
If you’re not going to use this dressing right away, put it
in the fridge.When ready for use, pour it over fresh Romaine leaves. (You can obviously add bacon, croutons and
whatever else you like on your Caesar Salad)
