My fabulous mother and I made some delicious stuffed artichokes the other day. I would love to share with you the tasty recipe she taught me. It's DELISH and healthy!
Ingredients:
3 large artichokes (the ones I used were very large)
Bread crumbs (Cup and a half)
2 diced artichoke stems (take the outer skin off…the
tough part)
3 pieces of slice prosciutto diced
2 tbsp. parmesan cheese
3 cloves of minced garlic
parsley (a handful)
Drizzle of Olive oil
Start by cutting the stem, and tops of the artichoke off. Take scissors and cut off the pointy tips of the leafs
Stuffing - Put the breadcrumbs, artichoke stems, prosciutto, and garlic in a bowl.
Don't forget the parmesan cheese! Mix all these ingredients together.
Using your good ol fingers, spread the artichoke leaves
slightly apart so there is room for the stuffing. Pour stuffing into every
crevis of the artichoke.
Put the stuffed artichokes in a big pot. Add water to the pot; the water should cover the bottom half of the artichokes. Drizzle with olive oil, and sprinkle parsley on the artichokes. Let this cook on medium/high for about an hour.
You will know they are finished when you can easily pull a leaf off, and they are very tender. Finished product.....yummy!
